Here is the list of stuff that will be inbound to my home by the end of July.
AMD Phenom 9850 BLACK EDITION 2.5GHz 4 x 512KB L2 Cache 2MB L3 Cache Socket AM2+ 125W Quad-Core Processor
I cant seem to decide between these two MB
ASUS Crosshair II Formula AM2+/AM2 NVIDIA nForce 780a SLI HDMI ATX AMD Motherboard
OR
ASUS M3N-HT DELUXE/MEMPIPE AM2+/AM2 NVIDIA nForce 780a SLI HDMI ATX AMD Motherboard

Obviously there is more stuff, but I needed to see if there are any ultrageeks here that can help me out with the selections.
Should I get an internal sound card and disable the on-board audio or not.
And finally should I just wait until I can afford the Intel set up?

As for the motherboards, toss a coin, I don't know
Video cards - I'd go for the newer one, the 9800GTX. Or, if you are into spending big money, check out the new models.

YES, get a sound card. Dedicated cards mean less load on the CPU, and better quality.

Brian - check Tom's Hardware Guide for the vid card (if you haven't already). I looked the other day and it seems like the GeForce 8800's are still holding their own if not beating the 9800's in several benchmarks. The only other advice I'd give you would be to get in contact with Michael Greenblatt at FS-GS.com before spending all of that momey. He'll be able to give you a recommendation on what to do hardware-wise and how to get the most out of all of your components and will likely save you a ton of money!
