Sorry if this is a silly question, but...
I've checked the promotion guides and looked for any staff on these programs but couldn't find them. In addition I've emailed training about an equipment transfer into either of these types and am eagerly awaiting a reply.
Does anyone know how to go about transferring into the 707/720 program?

Delta Virtual doesn't have a 707 or 720 program, since we never operated the aircraft. It's in the Fleet Installer for the Northwest, Western and Alaska birds. The closes you'll get is the DC-8.

I own both, the Dreamfleet works very nicely, but if you see the CS FSX version the
Dreamfleet will look like a cartoon afterwards, the CS is that good.
I just completed my 727 checkride in the CS, its autopilot is a bit less precise than
the Dreamfleet, which means it will seek a bit back and forth after a frequency change
but for all I know this is more realistic.
If you fly FSX then I would say the CS is a pleasure not to be missed
