Ultimate Terrain recently released beta conversion programmes to port UT from FS9 to FSX. Reading the pdf file that accompanies the programme, I noticed it mentioned the following tweak below for removing those rocky outcrops that appear in rivers etc. (e.g. the Thames in London). I have not personnaly tried the tweak, but since it is merely adjusting an entry in the Terrain.cfg it is easily reversible if required.

Rocky outcrops in water
The default FSX water textures will display rocky outcrops in sloping areas of rivers. This is not a widespread problem.
But, if it annoys you, there is a way around this issue.
To remove the rocky outcroppings, you need to edit your TERRAIN.CFG file. The texture normally used for water in
FSX is named ?OCEAN_SEA_LARGE_LAKE? in TERRAIN.CFG. You want to change the following lines:
Textures=OCEAN_SEA_LARGE_LAKE
To the line below:
Textures=OCEAN_SEA_LARGE_LAKE_0
This will display an alternate texture that removes the rocky outcroppings.
